in Hawaii, we call this fish a “kumu.” we also call it a “goat” because of the whiskers. this fish is by far the most sought out fish in the ocean. if you can spear this, you are eating like a King!
i cook this fish only this way because after trying different styles, this one tastes the best to me. just simply put it in a baking dish. salt/pepper, and fresh ginger.
then soak it in olive oil. this is the key to keeping it juicy.
bake it for 30 minutes on 375 degrees.
poke a fork in the middle to see if it’s cooked. please don’t over cook it!
then garnish with lots and lots of cilantro and green onions. then pour piping hot peanut oil over the top. add a little shoyu. then sit on the table and get ready to eat like a King!
