Ginza in Hawaii: Self Learning

i use to arrive every trip in japan craving for sushi! but now, i don’t. why? because there is finally some authentic traditional japanese sushi right here in honolulu. why go all the way to ginza when ginza is right down my street right?

the restaurant closed for the new years so the chef flew back to japan to pick up a top grade slab of maguro from tsukiji market. one day in the market, and next day to hawaii. as fresh as it gets! this piece of maguro was HUGE! and i bet the price tag was HUGE too!

this is the part i love about japanese restaurants. front row seats! and this is how i learn how to prepare the fish i catch. i teach myself by watching very closely. this is the real deal!

then of course i have to try every part of the fish. this is “chutoro.” so good!

this is “o-toro.” so great! it just melts in your mouth!
you have to have a fat wallet to visit this restaurant. it’s very expensive but at the same time, it’s the best. i’d rather pass up on 5 sushi dinners at another sushi bar and come here ONCE. because ONCE you eat here, you can’t eat anywhere else. as for name and location? i don’t remember. haha. it’s so good that i don’t want to tell people about it. it would kill me if i wanted to eat there and it was fully booked. can’t wait to go back!
