Smoked Pork Rubbish Can Hawaiian Style

there is so much culture in hawaii, one of it is pig hunting.  these big wild boars are deep in the mountains and finding them is pretty hard.  you either have to take dogs up to find them, or wait patiently in the bushes with a bow and arrow like how we do.  sitting on top of a tree sipping a beer waiting to hear the footsteps of a big wild boar.  when he comes, you get out your bow and arrow.  you line up a shot and only have a one inch target.  if you hit it, you get your pig.  if you miss it, your pig runs away and dies deep into the forest.  so when you let go of that arrow, you better be sure you got it.
once you get it, you pick it up and carry it out of the mountains on your back.  then you take it home, skin the hair off, and cut up the nice fillets of pork.  the first time i did this, i almost threw up.  now, i’m use to what the hawaiians use to do from hundreds of years ago.  it’s a culture and if you ever tried kalua pig before, it’s all worth it.

everybody has their own way of cooking the pig.  my friend brandon does it his own way.  he drinks 12 beers, buys a rubbish can, modifies it, and smokes the pig in it for hours and hours.

i ate smoked pork with chazuke for dinner, smoked pork with ramen the next day lunch, and had some pieces again for dinner.  it was so good!  thank you brandon for the bag of smoked pig.  call me when you go into the mountains again.  i’m ready to get my own pig!
