IKA SASHIMI!!!

good morning. 6:30 am and you better hurry up and surf because the strong tradewinds are coming soon. expected to be 40 mph by tomorrow. north shore is 4-6′ with 5 guys out at pipe. super cloudy and dark but looks fun. see you in the water….

i’ve said this over and over but nothing beats FRESH! check out this ika or squid. one hour earlier swimming in the ocean, one hour later a perfect snack….

my boat has a filet knife, cutting board, shoyu, and wasabi. that’s all i need. besides lobster sashimi, ika sashimi is one of my favorites!!! i want to thank all my captain friends, chef friends, fisherman friends, and everybody else that taught me how to cut and prepare fish. i couldn’t have done it without you guys…

and wanted to congratulate once again my friend pakana for catching this prize fish. there will be many more to come…. and thanks tat’s for cutting up all the sashimi filets for us….

Dive Bomber…


i had a question regarding what a “dive bomber” was. a dive bomber is a free diver who sees a fish and acts instantly. as soon as a fish comes in his eyesight, he dives straight down and attacks it from the top no matter what’s happening around him….
meet brandon “dive bomber” nishiki. i spot a big kumu yesterday so i drop down and wait patiently over a minute for this fish to come back out of the hole. i’m just relaxing on the bottom waiting and waiting. then the kumu peaks his head out of the hole and i was thinking “nice dinner.” i point my speargun and get ready to take the shot. all of a sudden, i see this guy diving straight down to my fish trying to spear it and eventually chasing it away. that was brandon. oh my gosh!!! and to think i go in the mountains with guns and arrows with this guy. abunai!!! haha…


ok, here is brandon’s way of steaming fish. first bake the fish in the over for 45 minutes…

then make this special sauce. brandon says it’s a secret but he didn’t know i was watching his every move…

pour it over the steamed fish and watch it sizzle…

this would cost you an arm and leg in a chinese restaurant. but for us, it was pennies. catch it, clean it, cook it. pretty simple but not so simple. but after taking your first bite, everything was well worth it!! thanks brandon for cooking all the fish. from now on after every dive, i’m going straight to your house to barbecue, watch the sunset, talk story, play ukulele, watch tv, and have a great time!!!
**but brandon, next time we go diving, please stay away from my fish. go dive bomb hayato’s fish… haha…
