not too many people around the world eat this fish. it’s called an “UHU.” but in hawaii, it’s mandatory for a bbq. the hard part is catching it, the harder part is cleaning it, and the hardest part is preparing it. the easy part is eating it. add all three times and your talking 3-100+ hours….

when it comes to the big uhu’s, it can be tricky cooking it. because it takes so much time to cook a fat uhu (this one is 6-7lbs), you have to leave it on the grill longer taking the chance of the fish curling and ruining. so to play it safe, i filet it up and cook the sides. it’s much more work, but much more chance of it turning out perfect….

as for the ingredients. just dig deep into the refrig. and throw anything your heart desires. in this case, i put bean sprouts, onion, sausage, ginger, chinese parsley, etc…
oh gosh, i got to get going. the bbq is starting. have a great evening. by the way, bowls was super fun this morning. surfed for 3 hours and had a great time!!! might have to do the same thing tomorrow….
