the last time i was in shikoku, i stopped by this famous little shop that makes hana katsuo, or bonito flakes.
this small shop had one machine, and 2 people running the big operation. this is a really famous brand and i couldn’t believe how 2 people could produce so much katsuo in a day.
old school machine, old school style, old school village, and old school taste. pure natural!
it couldn’t get any fresher than this. sprinkle some over your tofu or put it in your miso soup. so delicious!
it’s hard to imagine that every business in hawaii and japan use to be like this. i love this style of living and it’s sad to know that culture like this is fading out. i hope this little shop goes on and on and i’ll be going back and back.
i felt like i was living in my grandparents era. made me feel like running away from all the city lights and technology.
